Turkey Sweet Potato Hash Frittata

Ingredients

3 tbsp. butter
5 tbsp. butter, melted
8 large eggs
1 cup diced cooked potatoes
1 cup diced cooked sweet potatoes
1 cup diced cooked turkey
¼ cup thinly sliced green onions
1½ cups cottage cheese
1½ cups shredded Gruyere cheese
Salt and pepper to taste
1tsp. dried thyme
1/3 cup all purpose flour
¾ tsp. baking powder

Directions

  • Preheat oven to 350 degrees.
  • In a 10-inch oven-proof skillet melt the 3 tbsp. butter. Over medium heat sauté the potatoes, sweet potatoes, turkey and green onions for 2-3 minutes.
  • Meanwhile whisk together the eggs and cottage cheese. Fold in the Gruyere cheese, melted butter, salt & pepper and thyme. Sprinkle the flour and baking powder over the egg mixture and stir to combine.
  • Pour the egg mixture over the potatoes and turkey mixture and spread evenly to cover. Place the skillet in the oven and bake for about 50 minutes until a knife inserted in the center comes out clean. Serve the frittata hot.
