Ingredients

Maple Turkey Brunch Burgers

1 egg
1/3 cup panko bread crumbs
2 Tbsp maple syrup
1 Tbsp dijon mustard
1 tsp garlic powder
1 tsp sage
1 tsp thyme
1 tsp paprika
Good pinch of salt + pepper
Lettuce
Red Onion, sliced
Avocado
English Muffins

Perfect Fried Eggs

6 eggs, one to top each burger
1 Tablespoon unsalted butter
Pinch of salt + pepper

Candied Turkey Bacon

8 ounces Turkey Bacon
3 Tbsp brown sugar
1 Tbsp maple syrup

Maple Dijon Aioli

1 cup mayo
2 Tbsp maple syrup
1 Tbsp dijon mustard
Pinch of salt + pepper

Directions

For the Burgers

  • In a large bowl, mix all of the ingredients together for the turkey burgers until everything is evenly incorporated
  • Shape mixture in to 6 equal balls, and then flatten into 1/4” thick patties
  • Cook turkey burgers on a cast iron pan (or nonstick) until cooked through completely
  • Set to the side as you assemble the remainder of components
  • Wipe down your pan in preparation to fry the eggs for the burger

For the Fried Eggs

  • Warm a tablespoon of butter in a nonstick pan over medium heat until melted
  • Crack in desired amount of eggs and season with salt and pepper
  • Cook until the edges of the eggs are set and the middle of the whites are still clear
  • Pour a few tablespoons of water into the pan and cover with a lid
  • Let the steam finish cooking the whites of the egg and barely cook the yolk
  • Remove eggs from the pan and reserve for the burgers

For the Candied Bacon

  • Line a baking sheet with parchment paper
  • Preheat oven to 425
  • Mix together the brown sugar and maple syrup in a small bowl
  • Add turkey bacon to the prepared baking sheet and dollop the brown sugar on top of each slice of bacon
  • Bake bacon at 425 for 12-16 minutes, until golden and crispy

For the Maple Dijon Aioli

Mix ingredients together in a small bowl, and store in the fridge until ready to use.

Notes

Assemble burger as you wish, on top of a toasted English muffin, and enjoy!
